  • 1 tablespoon freshly squeezed lime juice

  • Shredded cooked chicken
  • Fresh cilantro
  • Lime wedges
  • Sliced fresh chili peppers
DIRECTIONS:

Place the medium saucepan on medium heat over high heat. Add broth, coconut milk, rice, ginger, lemongrass, red pepper (if used) and 1/2 tablespoon salt. Stir and lift until boiling. Reduce the fire and cover. Simmer for about 20 minutes until the rice is softened.
